FRIED RICE
Ingredients
3 cups cooked rice (parboiled, preferably cold)
2 cups chicken stock (for cooking rice)
2–3 tbsp vegetable oil
1 cup liver or chicken (optional but common)
1 cup carrots (diced small)
1 cup green beans (chopped)
1/2 cup sweet corn
1/2 cup green peas
1 medium onion (sliced)
2–3 seasoning cubes
Salt to taste
Curry powder (key for that Nigerian flavor)
Thyme (a little)
1 tsp turmeric (optional but gives color)
Scotch bonnet (optional for spice)
Instructions
Cook the rice Parboil rice with chicken stock, curry, thyme, and a little salt. Cook until just done, then spread it out to cool.
Prep the protein Season and fry or boil your chicken or liver. Set aside.
Stir-fry veggies Heat oil in a big pan or wok. Add onions first, then carrots, green beans, peas, corn. Stir-fry on high heat for 3–5 minutes so they stay crunchy.
Add seasoning Sprinkle a little curry, seasoning cubes, and salt. Mix well.
Add rice Pour in the cooked rice and stir gently so it doesn’t break.
Combine Add your fried chicken or liver. Toss everything together on medium heat for a few minutes.
Finish Taste and adjust seasoning. Turn off heat and let it sit for a minute before serving.

Tip
High heat + fast stirring = that classic Nigerian party fried rice texture (not soggy, not mushy).
