Raw Asian Vermicelli salad…

My inspiration for this Raw salad came from a kind gift of a red cabbage. I looked at making sauerkraut with it, even a coleslaw but they weren’t exciting my tastebuds. Until I came across an Asian flavoured dressing and thought, Yes this could work….
And now after sharing it with friends I am sharing it with you.

Well, Gorjis… when you find an entire field of clover, you simply have to lie down in it and see if some of that good luck rubs off. 🍀 I may not have found a four-leaf one, but the sunshine, the colour and a quiet moment on the road felt lucky enough to me. Fun fact: Awarua/Spring Creek was named for the cool, clear springs that rise from the Wairau Plain and flow together into the creek. Would you have stopped for a photo… or started hunting for the four-leaf clover?
