A delicious Pakistani-style baingan curry with the perfect balance of sweet, tangy, spicy and savoury flavours! 🀀🌢️

πŸ“ Recipe

Ingredients:

Baingan/eggplant – cut into thin cubes or slices

Potatoes – chopped

Onion – sliced/chopped

Ginger garlic paste

Tomatoes – chopped

Gur/jaggery – equal amount to imli

Imli/tamarind – equal amount to gur

Oil

Salt

Kashmiri red chilli powder

Chilli flakes

Turmeric

Cumin powder

Coriander powder

Cumin seeds

Kalonji

Methi dana

Rai/mustard seeds

Fresh coriander

Green chillies

Method:

Cut the baingan into thin cubes or slices and soak them in water.

Soak equal amounts of gur and imli separately in hot water. Remove the imli seeds by hand and set aside.

Heat oil and sautΓ© onion, ginger-garlic paste and tomatoes.

Add salt, Kashmiri red chilli, chilli flakes, turmeric, cumin powder, coriander powder, cumin seeds, kalonji, methi dana and rai.

Add the baingan and chopped potatoes and give everything a good bhunayi.

Add some water, cover and cook on medium heat.

Once bubbles start appearing on top, add the gur and imli mixture.

Cook until the oil separates and the gravy reaches your desired consistency.

Garnish with fresh coriander and green chillies.

Serve hot with steamed rice. πŸšπŸ’š

Achaari Arvi β€” spicy, tangy and packed with achaar-style flavours! 🌢️πŸ₯”βœ¨ A simple sabzi that tastes absolutely delicious with hot phulka. 🀀
Recipe:
Cut arvi into round slices and boil until tender.
Heat oil and add cumin, chopped onions and ginger-garlic paste. Cook until golden.
Add tomato paste, salt, Kashmiri red chilli powder, coriander powder, turmeric, chicken powder, Β½ chicken cube, methi dana and kalonji.
Cook until the oil separates.
Add boiled arvi and gently bhunao until well coated with the masala.
Cover and cook on dum for 15 minutes.
Garnish with green chillies and fresh coriander.
Serve hot with fresh phulka. 🌿

Recipe:
Mix chicken mince with onion, garlic, tomato (optional), capsicum, chilli flakes, black pepper, garlic powder, paprika, salt and cumin powder.

Take a small portion in your palm, place a cube of cheese in the centre and shape into a ball. Coat each ball in flour, then beaten egg, and finally breadcrumbs.

Deep fry until golden and crispy. Serve hot and enjoy! 😍

Creamy Egg Mushroom Curry πŸ³πŸ„βœ¨
A rich, comforting desi-style curry loaded with flavors of spices, creamy gravy, and perfectly sautéed eggs & mushrooms 😍 Best served hot with soft parathas!

πŸ’› Recipe:
β€’ Boil eggs and lightly sautΓ© with mushrooms. Add red chili powder, turmeric, and salt. Cook until slightly golden and set aside.

β€’ For gravy: Heat oil, add onions, 1-inch ginger, 5–6 garlic cloves, 5–6 green chilies, and 7–8 cashews. SautΓ© until soft, then cool. Add fresh coriander, a little yogurt, and milk. Blend into a smooth paste.

β€’ In a pan, heat oil and add 2 cloves, 3 green cardamoms, and 1 cinnamon stick. Add the prepared green paste and cook well.

β€’ Add yogurt, salt, chicken powder, black pepper, coriander powder, cumin powder, a pinch of white pepper, garlic powder, chicken cube(optional). Cook until oil separates.

β€’ Add kasuri methi, then mix in the sautΓ©ed eggs and mushrooms. Add fresh cream and cook for 2 minutes.

Serve hot with parathas and enjoy every creamy bite! 🀍

πŸ“ Kaddu ke Koftay Recipe

For Koftay:
1 kg kaddu
1 onion
6–7 garlic cloves
Β½ cup chicken mince (chopped with 5 green chillies)
1 boiled potato (grated)
Salt
Kashmiri red chilli powder
Turmeric
Chilli flakes
Cumin powder
Coriander powder
Garam masala powder
ΒΌ cup maida

πŸ‘‰ Grind kaddu, onion & garlic. Squeeze out all water (keep it aside for gravy).
πŸ‘‰ Mix kaddu with chicken mince & grated potato.
πŸ‘‰ Add all spices + maida and mix well.
πŸ‘‰ Grease hands, make koftas & deep fry until golden.

For Gravy:
Oil
Onion paste
Bay leaf, black cardamom, cloves, black peppercorns, nutmeg
1 chicken cube
Ginger garlic paste
Tomato paste
Salt, red chilli powder, chilli flakes, turmeric, cumin powder, chicken powder

Yogurt
Reserved kaddu water (plus extra water if needed)
Kasuri methi
Eggs (optional)

Coriander & green chillies for garnish

πŸ‘‰ Add chicken cube, ginger garlic paste & tomato paste. Do bhunayi.
πŸ‘‰ Add powdered spices, cook well until oil separates.

πŸ‘‰ Add kaddu water + extra water for shorba.
πŸ‘‰ Add fried koftay, kasuri methi & simmer.
