A delicious Pakistani-style baingan curry with the perfect balance of sweet, tangy, spicy and savoury flavours! π€€πΆοΈ
π Recipe
Ingredients:
Baingan/eggplant β cut into thin cubes or slices
Potatoes β chopped
Onion β sliced/chopped
Ginger garlic paste
Tomatoes β chopped
Gur/jaggery β equal amount to imli
Imli/tamarind β equal amount to gur
Oil
Salt
Kashmiri red chilli powder
Chilli flakes
Turmeric
Cumin powder
Coriander powder
Cumin seeds
Kalonji
Methi dana
Rai/mustard seeds
Fresh coriander
Green chillies
Method:
Cut the baingan into thin cubes or slices and soak them in water.
Soak equal amounts of gur and imli separately in hot water. Remove the imli seeds by hand and set aside.
Heat oil and sautΓ© onion, ginger-garlic paste and tomatoes.
Add salt, Kashmiri red chilli, chilli flakes, turmeric, cumin powder, coriander powder, cumin seeds, kalonji, methi dana and rai.
Add the baingan and chopped potatoes and give everything a good bhunayi.
Add some water, cover and cook on medium heat.
Once bubbles start appearing on top, add the gur and imli mixture.
Cook until the oil separates and the gravy reaches your desired consistency.
Garnish with fresh coriander and green chillies.
Serve hot with steamed rice. ππ
