If you’re looking for an easy one pot family dinner... make unstuffed peppers! To start you need to brown your meat and then add in chopped peppers and onions.
Mix in minced garlic, tomato paste and all of your seasonings. I used paprika, garlic powder, Italian seasoning, onion powder, salt and pepper. Pour in some beef broth, fire roasted tomato’s and then stir in your rice. Cover the pot and let it cook for 20 minutes until the rice is done. Add some shredded cheese on top, let it melt and then serve.
Ingredients:
• 1 lb ground beef
• 1 small onion
• 3 bell peppers (any colors)
• minced garlic
• 1 cup uncooked rice
• 2 cups beef broth
• 1 (14-15 oz) can diced tomatoes (do not drain)
• 1 tosp tomato paste
• 1 tsp smoked paprika
• 1 tsp Italian seasoning
• ½ tsp garlic powder
• ½ tsp onion powder
• Salt & black pepper to taste
• 1-1½ cups shredded mozzarella or cheddar
Recipe:
1. Brown the meat by heating a large skillet over medium-high heat. Add ground beef and cook until browned.
2. Add chopped onion and bell peppers to the pan and sauté for 3-4 minutes until softened. Stir in garlic and cook for an additional 30 seconds.
3. Add tomato paste and all of the seasonings. Then add the diced tomatoes, broth and rice. Stir everything together very well.
4. Bring to a light boil, then reduce heat to low. Cover and simmer for 20 minutes, until rice is cooked and liquid is absorbed. Stir once halfway through.
5. When done, sprinkle cheese on top, cover again, and let melt for 2-3 minutes.
