Cinnamon Apple Cake
This Cinnamon Apple Cake is a quintessential autumn dessert that combines the tender sweetness of apples with the warm, aromatic spice of cinnamon. The cake itself is moist and fluffy, with a golden crust that's sprinkled with a cinnamon and brown sugar topping, adding a delightful crunch with every bite.
Ingredients:
1 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/4 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 cup buttermilk
1 1/2 cups chopped peeled apples
2 teaspoons ground cinnamon
2 tablespoons brown sugar
Directions:
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat granulated sugar and butter with an electric mixer until light and fluffy. Beat in egg and vanilla.
Gradually add the flour mixture to the butter mixture alternately with buttermilk, beginning and ending with the flour mixture.
Fold in chopped apples. Pour batter into prepared cake pan.
In a small bowl, mix together cinnamon and brown sugar. Sprinkle over the top of the batter.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Apple Fritters
A delightful recipe that brings back wonderful memories of family vacations, county fairs, and homemade treats.
Ingredients:
1 1/2 cups all-purpose flour 🌾
1/4 cup sugar 🍬
2 tbsp. baking powder 🍞
1/2 tsp. salt 🧂
1 1/2 tsp. cinnamon 🌿
1/3 cup milk 🥛
2 eggs 🥚
3 tablespoons applesauce 🍏
2 large Granny Smith or Honey Crisp apples, peeled, cored, and diced 🍏
Canola oil for frying 🛢️
Icing:
2 cups icing sugar 🍬
1/4 cup milk 🥛
1/2 teaspoon vanilla 🍦
Methods:
Prepare cooling racks on wax paper-lined baking sheets. Set aside.
In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
In another bowl, whisk together milk, eggs, and applesauce.
Combine wet and dry ingredients. Fold in diced apples.
Heat canola oil in a deep fryer or large pot to 375°F.
Carefully drop spoonfuls of the batter into the hot oil. Fry until golden brown, then flip to cook the other side.
Remove fritters and place them on the prepared cooling racks.
For the icing, mix icing sugar, milk, and vanilla until smooth. Drizzle over warm fritters.

Stuffed Pepper Soup
"My hubby is beyond addicted to this stuff! We finish one serving and he's asking when I can make it again haha. I need to teach him how to make it!"
Ingredients:
1/2 lb Italian sausage
1/2 lb lean ground beef
1 small finely chopped onion
1 green pepper, finely chopped
1 red pepper, finely chopped
3 cloves garlic, chopped
4 c low sodium beef broth
2 cups low sodium chicken or vegetable broth
1 can (14.5 oz) salsa tomatoes
3/4 cup raw rice (I use jasmine)
kosher salt and fresh ground black pepper
Instructions:
In a pot or casserole over medium heat, brown the Italian sausage and ground beef; separating as you go.
In the middle of browning, add onions and peppers; stirring several times. During the last minute of browning, reduce heat to medium-low and add chopped garlic, stirring constantly. Drain the excess fat.
Add the beef broth, chicken broth and tomatoes to the salsa and simmer. Simmer for 15 minutes or until the peppers begin to soften.
Add the rice and coat well. Cover and cook for 5-7 minutes or until the rice is tender. For best results, serve quickly. Season with kosher salt and freshly ground black pepper to taste.

Peanut Butter Lunch Lady Cookie Bars Recipe
INGREDIENTS :
2 cups flour
2 cups sugar
2 large eggs, beaten
1 ½ cup peanut butter, divided
1 ½ cups (3 sticks) unsalted butter, softened
½ cup milk + 2 tablespoons, divided
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon salt
4 cups powdered sugar
PREPARATION :
Preheat oven to 400°F. Grease a large cookie sheet or line with parchment paper.
Mix together dry ingredients: flour, sugar, baking soda, and salt. Set aside.
Whisk together ½ cup milk, vanilla extract, eggs. Set aside.
In a saucepan, melt 1 cup (2 sticks) of butter and 1 cup peanut butter, bring to a boil. Remove from heat and slowly add flour mixture, followed by milk and egg mixture. Mix until well combined.
Pour batter onto cookie sheet, spreading batter evenly to edges. Bake for 20 minutes or until toothpick inserted in center comes out clean. Cool completely before frosting.
For frosting: In a saucepan, bring 1 stick butter and ½ cup peanut butter to a boil. Add 2 tablespoons milk and slowly mix in powdered sugar until well combined. Pour frosting over cake, spreading evenly to edges. Allow frosting to cool and set before serving.

Hawaiian Banana Bread
Ingredients
1/2 cup butter, softened
1 cup sugar
2 large eggs
1 very ripe banana, mashed
1 cup crushed pineapple (do not drain)
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup shredded coconut
Instructions
Preheat oven to 350 degrees.
In a large bowl, cream butter and sugar together with a mixer until light and fluffy. Add eggs, one at a time and beat to incorporate.
Stir in mashed banana and pineapple.
In a separate, medium sized bowl, sift together flour, baking powder, baking soda, and salt. Add to wet ingredients.
Stir in coconut flakes/shreds.
Pour mixture into a greased loaf pan (9×5). Bake for 60 minutes or until a toothpick inserted comes out clean.
