I love eggplant parm. But I don’t like the way it gets soggy as a casserole. Tonight I made a deconstructed version. I baked the eggplant crunchy with panko tossed in olive oil in the oven and flipped 4 times. Total 20 minutes Topped with with mozzarella and broiled. Topped with meat sauce and parm. It stayed crunchy and yummy. ❤️
