Why is there a worldwide chef shortage? I’m not claiming to have the answer to this one (and I know that there are a lot of factors at play) but wanted to share the answer that I keep on getting when asking chefs why they are all of a sudden leaving the industry.. The most common answer is that the pandemic forced them to take time out and in this time they came to realise that the chef life wasn’t for them anymore. Undoubtedly working conditions for chefs are improving overall but with all this time to think there are plenty of chefs simply not willing to go back to the long hours and stressful environments that have been their ā€˜normal' for so many years. What are your thoughts on this one? Is it something that you have noticed too?

ā€œBefore I set out to travel this world, 12 years ago, I used to believe that the human race as a whole was basically a few steps above wolves.
That given the slightest change in circumstances, we would all, sooner or later, tear each other to shreds. That we were, at root, self-interested, cowardly, envious and potentially dangerous in groups. I have since come to believe -- after many meals with many different people in many, many different places -- that though there is no shortage of people who would do us harm, we are essentially good.
That the world is, in fact, filled with mostly good and decent people who are simply doing the best they can. Everybody, it turns out, is proud of their food (when they have it). They enjoy sharing it with others (if they can). They love their children. They like a good joke. Sitting at the table has allowed me a privileged perspective and access that others, looking principally for "the story," do not, I believe, always get.
People feel free, with a goofy American guy who has expressed interest only in their food and what they do for fun, to tell stories about themselves -- to let their guard down, to be and to reveal, on occasion, their truest selves.ā€

Over at I’ve been working on putting together a chef jacket with a strong focus on making sure that it is produced in a sustainable manner.. Today I was stoked to have stumbled across the findings from a 2019 survey called ā€˜the sustainability of a chef’, it was a great reminder for me to not forget about the sustainability of the humans who are going to be wearing the jackets that I create. The survey pointed out things that would be no surprise to you, the conditions that chefs have become accustomed to working in (in many but not all cases) aren’t healthy or sustainable. There seems to be strong evidence coming through that while many chefs were forced (due to Covid-19) to finally rest and reflect, they have become more aware of some of the unhealthy (and often unnecessary) habits that they have formed over their years of working in kitchens.

Shout out to the kitchens and workplaces that have taken some time to consider the health and wellbeing of their chefs by offering better work conditions and work-life balance, there seem to be plenty of establishments jumping on board this new wave and it’s fantastic to see šŸ˜ˆšŸ™Œ

When I had this t-shirt designed (exactly a year ago) I honestly had no idea that one year on the hospitality industry would still be in the thick of this crisis 🤯 Hospo isn’t dead, but it sure as hell has had some casualties along the way. Melbourne, I have no idea how you have kept on keeping on after enduring Australia’s longest lockdown of 2020 and currently living through your 6th lockdown. As if hospitality isn’t a tough enough industry already! The speed at which you guys innovate and pivot when thrown in to lockdowns is mind-blowing - I can only imagine the despair that is hiding behind the positive and upbeat instagram posts promoting your latest lockdown style takeaway menus. Everybody in this industry deserves a pat on the back and one hell of a party when this is all over. šŸ’­

All JD tees are made from certified organic cotton - About a year ago I started being more thoughtful of the impact that producing garments can have on the environment so switched over to organic cotton to lower the carbon footprint from producing JD tees. Using organic cotton is much better for the health of the workers at the cotton plantations and much better for the planet 🌱

I hope you’re all having a great Friday - special shout-out to all those of you going through yet another lockdown 🤯 Definitely feeling for you guys and hope you’ve managed to find some positives in all this mess..
