We are not aiming for zero waste or to be fully self sufficient. But we are aiming to choose better. We are starting by growing more of our own food right where we are on a suburban block in coastal Tasmania.

We are choosing more Natural fibres and less plastic where we can.

We are learning to preserve our food, aiming to grow enough to be able to pick something from the garden to eat every day of the year.

We are far from perfect, but all the little choices add up. All the skills we learn make us more resilient.

You know the feeling, you enter a competition and you dream about how you’re gonna spend it. Not ever thinking you might win.. well our garden was a finalist in the Bunnings Warehouse DIY competition and I completely missed the email. Not by a little bit but by 15 days so well outside the terms and conditions. Ahhhhh 🤷🏼‍♀️. Oh well, good news is they liked my garden 🤪

Other than the odd batch of kombucha that tastes like vinegar, this is my first deliberate go at making my own apple vinegar. And it tastes absolutely amazing.

And best of all I used scrap parts of the apples, just some apple peel and cores left in some filtered water.

🍎 place the fruit into a wide-mouth food grade container or jar. Top up with water leaving room at the top to stir.
🍎 cover the container with fine mesh fabric or tea towel.
🍎 Over the next 2-3 weeks stir the mixture with a clean spoon everyday
🍎When the colour of the liquid darkens and most of the fruits goodness and flavour is in the water it’s now time to strain.
🍎transfer the liquid back into a food grade container or jar. Pop the fabric on top and leave undisturbed for a couple of months.
🍎 remove the mother, strain and bottle

If your batch is a bit unpleasant you can use it for cleaning or in the garden.
