Grilled Chicken Salad Bowl

Ingredients
2 chicken breast fillets
1 tablespoon olive oil
Juice of 1 lemon
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and black pepper to taste
2 cups leafy greens (spinach, arugula, or lettuce)
1 cup cooked quinoa
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/4 avocado, sliced
1 tablespoon pumpkin or sunflower seeds (optional)
Dressing
2 tablespoons plain yogurt
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup (optional)
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
Prepare the chicken:
Season the chicken fillets with olive oil, lemon juice, smoked paprika, garlic powder, salt, and pepper.
Grill the chicken in a non-stick skillet or on a grill until fully cooked (about 5-7 minutes per side). Set aside.
Prepare the bowl ingredients:
Wash the leafy greens and vegetables.
Cook the quinoa according to the package instructions.
Assemble the bowl:
Place the leafy greens as the base in a bowl. Add the quinoa, cherry tomatoes, cucumber, avocado, and sliced chicken.
Sprinkle the seeds on top.
Make the dressing:
Mix all dressing ingredients in a small bowl until smooth. Drizzle the dressing over the salad.
Serve:
Serve immediately and enjoy a nutritious and flavorful meal.
