One of my earliest cakes when I was just starting out. Looking back I see all the little flaws in this cake, and what I would do differently now. I was hesitant to post this, especially since Instagram images of cake are nearly picture perfect. But this was my starting point. If I never attempted to make a cake like this, I probably wouldn’t be making the cakes I am now. There always has to be a starting point.

Sometimes you need to make a decision …. White vs. off-white buttercream. While I love the look of a white buttercream, I prefer the taste of pure vanilla extract (vs. artificial vanilla extract ) in my buttercream. And guess what? A vanilla bean is dark brown in colour as is pure vanilla extract. Which means my white buttercream is technically not a true white. But I’m okay with that. Now, if a client specifically wants a whiter buttercream, I will use clear imitation extract instead but so far pure vanilla is my go-to because it truly enhances the flavour of a vanilla buttercream. …….Do you like the flavour of pure vanilla extract too in icing?

How it starts. Plain and simple freshly baked vanilla and chocolate cupcakes. Not as “eye-catching” as the finished product. But it’s a good tasting cupcake that makes the difference. No amount of pretty decor can hide a cupcake that doesn’t taste good to your palette. Do you agree?
