Ever wondered why some baker can charge more for similar cookies?

This may not sit well with some bakers but here goes…

It’s because customers felt they were getting a more valuable experience.

Selling cookies as a packaging designer only reinforced something I’d believed for years.

Customers don’t make decisions based on cookie skill alone.

They make decisions based on how they expect the overall experience to feel.

Of course cookie skills matter. A lot.

But so does packaging, presentation, the unboxing experience, and every touchpoint before the first bite, including your social media pages and website.

For bakers struggling to increase their prices, the lesson isn’t really about cookies.

Customers start deciding what something is worth long before they place their order.

Then, when they receive it, they look for confirmation that it was worth what they paid.

If you’ve done a market you’d know that the last thing you want is having to bring unsold cookies home.

So what do we do? We discount our cookies. I’ve never liked that strategy. If anything, I think it undervalues the work that goes into them.

So I did something different. Buy four sugar cookies at the regular price and I’d package them in a little red cottage house. 9 out of 10 people upgraded … Not because they wanted four icing cookies, but because they wanted the house.

A few people told me they didn’t need four cookies.
My response? “Then keep the house for yourself. It’s cuter than a dollar store gift bag.” They’d end up getting 4. 🥴

➡️ ➡️➡️ But here’s the part I didn’t expect.

As shoppers walked around the market carrying their little cottage houses, people kept stopping them to ask where they got them.

About an hour into the market and throughout the day, strangers would show up at my booth asking to purchase cookies in the red house cookie box. 🤯

And they’d only seen the house.

Wild, right??!!

That’s when I realized that the packaging was doing the advertising for me. 🤯

Want to charge more for your cookies? 💰

Then you need to understand the difference between professional and premium.

I hear bakers say this all the time. “My packaging is very professional.”

Yes! So is everyone else’s. That’s the problem.

Many bakers think they’re competing against other bakers. They’re not. They’re competing against customer expectations. A bakery box, cello bag, ribbon, and thank you card are all expected but they don’t make your cookies look premium.

The uncomfortable truth is that many bakers confuse professional with premium.

Professional means you met the standard.

🤩Premium means people notice.

Nobody looks at a bakery box and thinks, “Wow. I’ve never seen that before.” Bakery boxes are expected.

So when you’re delivering what’s expected, it’s hard to charge premium prices.

We spent the morning at the Louvre. We’re not museum people, more like village idiots of international travel. So we were in and out in about two hours. 🤣

I did get to see the Mona Lisa though. And for the record, it’s much bigger than people make it sound. With the way people talk about it, I expected postage stamp size. 🥴

Anyway… The highlight of the day wasn’t the Louvre. Sacre bleu! 🇫🇷🤣

It was waiting for our pickup time at Cedric Grolet.
We grabbed a couple of his famous trompe-l’œil fruit desserts and took them to Jardin des Tuileries.

Some people travel for art. I travel for pâtisserie.

And if I’m being completely honest, sitting in a beautiful park eating ridiculously pretty desserts was one of my favourite memories from France.

Give me a tucked-away café, a great latte, and a pastry worth talking about months after, and I’m happy.

Come to think of it, that probably explains my obsession with decorating sugar cookies inspired by cafés, bakeries, and pâtisserie. 🥴

Let’s talk about something stupid we all do.🤣

Most businesses spend more time focused on the gift than they do choosing the presentation.

I think they have it backwards.

Because nobody ever walks into a room and says:
“Wow. Look at that gift card.”

Yet every year businesses spend thousands of dollars on gifts and then present them in the packaging equivalent of a grocery bag.🥴
