Fungi at the !
So pleased to finally see the mushroom fruits of our labour from the past few months with the reopening of the Ledbury Restaurant.
Introducing mycelium decorative panels, lampshades and even presentation bowls into the restaurant was a part of Head Chef, Brett Graham's vision of exploring sustainable practices, both in the fields and all the way to the table.
The restaurant even features a mushroom fruiting chamber by to provide for their delicious tasting menu!
This project pushed our boundaries of production and the fungi certainly didn't grow quitely, but with the help of friends, family and the amazing team at the Ledbury we were able to set a new style of sustainable mushroom interiors.
If you're in London, you need to go try their food! It's good enough to die and become mushroom food for!
