Hidden veg tomato sauce

Ingredients
1 tsp vegetable oil
1 red onion, roughly chopped
2 courgettes, roughly chopped
2 carrots, roughly chopped
2 red peppers, seeds removed, roughly chopped
320g/11½oz butternut squash, peeled and roughly chopped
2 tbsp tomato purée
1 tsp dried thyme
2 tsp onion granules
4 garlic cloves, finely grated
2 x 400g tins chopped tomatoes
325g/11½oz passata
salt and freshly ground black pepper

Method
Heat a large casserole dish over a medium heat. Add the oil and onion and fry for 2–3 minutes, until just softened.
Add the remaining ingredients, stir well and bring to the boil. Turn the heat down and simmer gently for 1 hour, until the vegetables are cooked.
Pour into a blender and blitz until smooth, then season to taste with salt and pepper. Leave to cool then separate into portions to freeze and use at a later date. See the tips section for ideas.

Pea and ham soup

Ingredients
1 tbsp butter or vegetable oil
1 large onion, roughly chopped
1 baking potato or any large floury potato (about 300g/10½oz), peeled and roughly chopped
1 litre/1¾ pint stock from cooking the gammon (alternatively use vegetable or chicken stock)
500g/1lb 2oz frozen peas
small bunch fresh mint (about 5 sprigs)
100g/3½oz cooked gammon or ham, shredded
salt and black pepper

Method
Heat the butter or oil in a large lidded saucepan set over a low–medium heat. Gently fry the onions until soft, keeping the heat low so they don't brown.
Stir in the potato and pour in the stock. Cover loosely and bring to the boil. Reduce the heat a little and simmer until the potato is tender (about 10 minutes).
Tip in the peas and add 3–4 mint stalks with leaves. Bring back to the boil then remove from the heat. Blend in a food processor or using a hand blender, taste to check the seasoning and add salt and pepper if needed (the stock will be quite salty).
Stir in the ham, allow to warm through in the hot soup and then serve, garnished with a few mint leaves.

2 skinless chicken breasts
70g/2½oz cornflakes, crushed
1 tsp Cajun seasoning
1 tsp paprika
1 tsp dried oregano
1 tsp lemon salt (optional, see recipe tip)
2 free-range eggs
2 slices bacon, or more, to taste
To serve
2 brioche burger buns
light mayonnaise
iceberg lettuce
sliced tomato

Pancakes with berries and white chocolate

Ingredients
50g/1¾oz plain flour
small pinch salt
1 medium free-range egg
150ml/5fl oz milk
2 tsp vegetable oil or melted butter, plus extra for frying
For the topping
100g/3½oz white chocolate, broken into small pieces

Air fryer cheese toastie

This toastie is exceptional considering how hands off it is to make, with a crunchy outer layer and oozy melting cheese. See Recipe Tip for other filling ideas.

Ingredients
For the pickles (optional)
1 tbsp caster sugar
1 bay leaf
1 tsp mustard seeds
5g⅛oz fresh dill, roughly chopped
200g/7oz vegetables, such as carrots, radishes, celery, fennel or cauliflower, thinly sliced
120ml/3¾fl oz white wine vinegar
For the toastie
2 slices good quality bread (we used sourdough)
15g/½oz butter
70g/2½oz cheese, grated (such as cheddar, Lancashire, mozzarella, or a mix of your favourites)
other fillings of your choice (optional – see Recipe Tips)

Method

If making the pickles, heat the sugar in a small saucepan over a medium heat with 100ml/3½fl oz water, the bay leaf, mustard seeds and dill. Bring to a simmer then remove from the heat and stir in the vinegar and sliced vegetables. Placed in an airtight jar, the pickle will keep for up to six weeks in the fridge.

To make the cheese toastie, butter each slice of bread well. Turn over, and fill the toastie with your choice of fillings.

Sandwich together well, with the buttered part on the outside. Preheat the air fryer to 190C.

Bake for 6–8 minutes until the bread is toasted and the cheese has melted. Serve the toastie with the pickles on the side, if you like.

Air fryer chicken bites with sweet and sour sauce

Try these perfect air-fried crispy chicken bites with a really simple sweet and sour sauce. Sweet potato or aubergine would be great veggie alternatives, too.

Ingredients
2 chicken breasts, cut into 1cm/½in bite-size pieces
5 tbsp plain flour
1 large free-range egg, beaten with 1 tbsp whole milk
80g/2¾oz panko breadcrumbs
cooking oil spray
2 spring onions, sliced, to serve
salt and freshly ground black pepper
For the sweet and sour sauce
150ml/¼ pint pineapple juice
40g/1½oz light brown sugar
40ml/1½fl oz apple cider vinegar
2 tbsp tomato ketchup
1 tbsp low salt soy sauce
1 tbsp cornflour, mixed to a smooth paste with 2 tbsp of the pineapple juice

Method

Preheat the air fryer to 190C.

Add the flour to a plate and season with salt and pepper. Place the egg and milk mixture in a small bowl and place the breadcrumbs in a larger bowl.

Toss the chicken pieces first in the flour, then the egg, then finally the breadcrumbs.

Add the coated chicken to the air fryer in batches, spreading out into a single layer and adding a few sprays of cooking oil. Air fry for 8–10 minutes, until crispy and cooked through.

While the chicken is cooking, prepare the sauce. Place all the ingredients in a saucepan and bring to the boil, reduce to a simmer and stir constantly for 2–3 minutes, until the cornflour has thickened the sauce.

Toss the crispy chicken bites in the sweet and sour sauce and top with spring onions to serve.
