Hidden veg tomato sauce

Ingredients
1 tsp vegetable oil
1 red onion, roughly chopped
2 courgettes, roughly chopped
2 carrots, roughly chopped
2 red peppers, seeds removed, roughly chopped
320g/11½oz butternut squash, peeled and roughly chopped
2 tbsp tomato purée
1 tsp dried thyme
2 tsp onion granules
4 garlic cloves, finely grated
2 x 400g tins chopped tomatoes
325g/11½oz passata
salt and freshly ground black pepper

Method
Heat a large casserole dish over a medium heat. Add the oil and onion and fry for 2–3 minutes, until just softened.
Add the remaining ingredients, stir well and bring to the boil. Turn the heat down and simmer gently for 1 hour, until the vegetables are cooked.
Pour into a blender and blitz until smooth, then season to taste with salt and pepper. Leave to cool then separate into portions to freeze and use at a later date. See the tips section for ideas.

Pea and ham soup

Ingredients
1 tbsp butter or vegetable oil
1 large onion, roughly chopped
1 baking potato or any large floury potato (about 300g/10½oz), peeled and roughly chopped
1 litre/1¾ pint stock from cooking the gammon (alternatively use vegetable or chicken stock)
500g/1lb 2oz frozen peas
small bunch fresh mint (about 5 sprigs)
100g/3½oz cooked gammon or ham, shredded
salt and black pepper

Method
Heat the butter or oil in a large lidded saucepan set over a low–medium heat. Gently fry the onions until soft, keeping the heat low so they don't brown.
Stir in the potato and pour in the stock. Cover loosely and bring to the boil. Reduce the heat a little and simmer until the potato is tender (about 10 minutes).
Tip in the peas and add 3–4 mint stalks with leaves. Bring back to the boil then remove from the heat. Blend in a food processor or using a hand blender, taste to check the seasoning and add salt and pepper if needed (the stock will be quite salty).
Stir in the ham, allow to warm through in the hot soup and then serve, garnished with a few mint leaves.

A delicious, creamy pasta supper that will feed four people generously but easily stretches to six if you have younger children to feed. If your children are older, you could add some extra pasta. Turkey is often an economical choice, so think about swapping it in for chicken breast in your favourite dishes.

This recipe is part of a budget meal plan for six. In November 2023 this recipe was costed at an average of £6.41 when checking prices at four UK supermarkets. It is designed to be made in conjunction with a low-cost store-cupboard.

Using ingredients wisely means you get a luxury Christmas dinner for less with this brilliantly simple and quick roast turkey with trimmings – all for under £5 per head. Frozen turkey breast joints are fantastic value and this one is made special by flavouring it with clementine and thyme and serving with a rich gravy.

See the Recipe Tips for advice on substitutions to make this recipe cheaper and how to cook it using a smaller turkey joint (1.5kg/3lb 5oz is generous for six people and you're likely to have some leftovers).

This soup is fairly rich and feels quite extravagant. Chestnut mushrooms, also known as brown mushrooms, have a firm texture and earthy flavour. They are my favourite for a soup or sauce, as they have more flavour than button mushrooms.

This is a good ‘stick to your ribs’ kind of soup. With savoy cabbage, potato and leek, it's hearty and satisfying while being quick to throw together. Serve with cheesy toasts for a filling meal.

This easy butternut squash soup recipe is completely dairy-free! It has added red pepper and ginger, and is deliciously smooth. Roasting the squash, rather than boiling it in a pan, really brings out the flavour in the soup.

For this recipe you will need a 3.5–4 litre/6–7 pint deep-sided saucepan.
