Halloumi curry

Ingredients

For the batch-cooked roast vegetables
1kg/2lb 4oz courgettes, cut into 3cm/1¼in chunks
2 onions, cut into wedges
600g/1lb 5oz peppers, seeds removed and cut into 3cm/1¼in pieces
2 tsp olive oil
2 tsp paprika
salt and ground black pepper

For the curry
1 tbsp vegetable oil
450g/1lb halloumi, cut into 3cm/1¼in cubes
3 garlic cloves, crushed
2 tbsp medium curry powder (see Recipe Tips)
½ of the batch-cooked roast vegetables (about 450g/1lb cooked weight), see above
2 tbsp plain flour
400g tin reduced-fat coconut milk
½ tsp sea salt
200g/7oz rice, cooked according to packet instructions, to serve

Curried butter beans with flatbreads

Ingredients

For the curry paste
2 garlic cloves, peeled
5cm/2in piece fresh root ginger, peeled
50g/1¾oz onion, roughly chopped
1 tbsp coconut oil
2 tsp mild curry powder
2 tbsp tomato purée
1 small red chilli, roughly chopped and seeds removed

For the curried butter beans
1 tbsp coconut oil
200g/7oz cherry tomatoes, halved
400g tin butter beans, rinsed and drained
10g/⅓ oz fresh coriander, finely chopped
salt and black pepper
2 flatbreads, to serve

Pesto eggs with crushed peas on toast

Ingredients
200g/7oz frozen garden peas
4 slices bread, toasted
4 tbsp cream cheese
4 tbsp pesto
4 free-range eggs
dried chilli flakes or paprika, to garnish
salt and freshly ground black pepper

Method
Put the peas in a heatproof bowl, cover with just-boiled water and leave to stand for 3 minutes.
Drain well, then crush roughly with a potato masher or large fork and season with salt and pepper.
Place the toast on four plates and spread with the cream cheese. Spoon the crushed peas over each piece of toast.
Spread the pesto in a thin layer across a non-stick lidded frying pan. Crack the eggs into the pan then season with salt and pepper. Cover the pan and cook for 4–5 minutes until the egg whites are set but the yolks are runny.
Place the pesto eggs on top of the pea toast. Season with salt and pepper. Garnish with some chilli flakes or paprika and serve.

2.2kg/4.5lb whole lamb shoulder
3 tbsp rosemary, leaves picked and finely chopped
2-3 tbsp olive oil
1 tsp ground paprika
salt and pepper
2 onions, sliced
1.2 litres/2 pint stock
2 tbsp plain flour
1 tbsp redcurrant jelly

50ml/2fl oz olive oil
2 onions, sliced thinly
6 garlic cloves, sliced
2 tsp paprika
70g/3oz chorizo, cut into cubes
100g/4oz padron peppers or other tiny green peppers, sliced (or 1 large pepper, diced)
900g/2lb baby new potatoes, halved lengthways
85ml/3fl oz dry white wine
300ml/10fl oz water
8 x 100g/4oz or 4 x 225g/8oz hake steaks

We have a glorious list of delicious pancake recipes, whether you enjoy them on Pancake Day or you're a regular on Saturday morning. The humble pancake is made from a batter of milk (or milk and water), eggs and flour which is then cooked in a frying pan or on a griddle until golden brown on both sides. You can buy special pancake pans which are shallow and non-stick with curved sides. French pancakes are made slightly thinner and are called crêpes. Scotch pancakes are small and thick, usually cooked on a griddle and sometimes flavoured with sultanas or raisins. American pancakes are normally served at breakfast. They tend to be light and fluffy, served in generous stacks with bacon and maple syrup. There is also the Russian blini, Chinese pancakes served with Peking duck, Italian crespelle and so on. Pancakes are traditionally eaten in the UK on Shrove Tuesday.

What's the secret to making the perfect pancakes? Trust Delia Smith to show you and enjoy Pancake Day without any flops. Delia's method uses milk and water for really thin, lacy edges. With added melted butter for flavour, these thin British pancakes taste best with drizzled with lemon juice and sprinkled with crunchy, granulated sugar.

Each pancake (without topping) provides 88kcal, 7.5g carbohydrates (of which 0.9g sugars), 5g fat (of which 2g saturates), 0.4g fibre and 0.2g salt.
