How is your going? Whether you’ve been vegan for years or this is your first time going animal-free, wear your vegan status with pride.

Tonight’s dinner (under the mound of vegan Parmesan) is a baked sweet potato with home-grown oyster mushrooms sautéed with red onion and courgette, then tossed in a ginger and garlic glaze (I used this recipe for the glazing sauce: https://tiffycooks.com/ginger-glazed-oyster-mushroom-15-minutes/). It’s been fascinating watching the mushrooms grow and I can recommended getting a kit like this one from that sent me for my birthday.

Tonight’s dinner is a caramelised red onion and leek tart with a balsamic glaze. Looks fancy but is dead easy to make. Use shop bought puff pastry (it’s usually accidentally vegan), and you don’t even have to roll it out. Cook thinly sliced red onions in olive oil and a little vegan butter. Cover the pan and don’t stir much. If it starts to stick to the bottom, deglaze the pan with a splash of balsamic vinegar or water. Add in thinly sliced leeks, oregano, and a bit more butter when the onions have cooked down. Cover the pan again. Once the mix has all cooked down, season with salt and petter and put to one side. Unwrap the pastry and lay it on a baking sheet (I use the paper it’s wrapped in the line the baking sheet). Score a line around the outside of the pastry, about 2cm in from the edge. Spread out the onion and leek mix inside the frame you just made. Brush non-dairy milk around the “frame” and pop in the over at 180 degrees. When the pastry is golden brown, take out of the oven and drizzle with a thick balsamic vinegar syrup. Eat whilst hot. 🥧
