Instructions

1. Saute ground spices, chicken, shrimp, bay leaf, lemongrass until fragrant and color changes.
2. Pour the coconut milk and cook until done.
3. Remove the chicken, then shred.
4. Serve with shredded chicken appendages are doused hot sauce.

Cara Pembuatan

1. Tumis bumbu halus, ayam, udang, daun salam, serai sampai harum dan perubahan warna.
2. Tuang santan dan masak sampai matang.
3. Angkat ayam, lalu disuwir (diiris).
4. Sajikan dengan irisan pelengkap ayam yang disiram saus panas.

Laksa Betawi Recipe

Ingredients:
1/2 chicken, cut into pieces
200 grams of fresh shrimp, peeled

Seasoning:
2 bay leaves
1 stalk lemongrass, crushed
1 cm cinnamon
2 whole cloves
2 tablespoons cooking oil for sauteing
1500 ml coconut milk from 1 coconut

Subtle seasoning:
10 grains of red onion
5 cloves of garlic
3 eggs hazelnut
2 cm turmeric
1 teaspoon coriander
1 tablespoon salt

Complement:
100 grams bean sprouts
100 grams of noodles brewed
2 boiled chicken eggs, cut in 4 parts
basil

Resep Laksa Betawi

Bahan:
1/2 ayam, potong-potong
200 gram udang segar, kupas

Bumbu:
2 lembar daun salam
1 batang serai, memarkan
1 cm kayu manis
2 siung utuh
2 sdm minyak goreng untuk menumis
1.500 ml santan dari 1 kelapa

Bumbu halus:
10 butir bawang merah
5 siung bawang putih
3 butir telur hazelnut
2 cm kunyit
1 sendok teh ketumbar
1 sendok makan garam

Pelengkap:
100 gram tauge
100 gram mie diseduh
2 butir telur ayam rebus, potong 4 bagian
kemangi

Laksa Betawi have a different taste with laksa in other areas. Although the broth looks like similarly yellow, but broth laksa Betawi usually use small shrimp. Laksa Betawi usually contains eggs, rhombus, short bean sprouts, basil, and chives are usually eaten with semur Betawi.

Laksa Betawi memiliki cita rasa yang berbeda dengan laksa dari daerah lainnya. Meski kuahnya tampak serupa berwarna kuning, namun kuah laksa Betawi biasanya menggunakan udang rebon. Laksa Betawi lazimnya berisi telur, ketupat, tauge pendek, daun kemangi, dan kucai biasanya dimakan dengan semur Betawi.

Historically, laksa is a flavored noodles according Peranakan culture. In no laksa combined Chinese and Malay elements. There are several types of laksa. As is known in Indonesia is a type of laksa Penang. The shape of noodles are rounded, white and slightly thick.

Laksa Betawi is one of the rare culinary in Jakarta. The name "laksa" is taken from the word in Sanskrit (ancient Indian), "laksha", which means "a lot". It shows that the laksa noodles made with many ingredients.

Pempek is served together with a dark, rich sauce called cuka (Baso Palembang: cuko, lit. vinegar). Cuka is produced by adding brown sugar, chili pepper, garlic, vinegar, and salt to boiling water. Cuko is purposely made in hot and sweet taste to add eating appetite. Yet, some people who dislike hot taste can prefer a less hot but sweeter cuko.

Pempek disajikan bersama-sama dengan saus yang gelap dan lengkap disebut Cuka (Cuko). Cuko dihasilkan dengan menambahkan gula merah, cabai, bawang putih, cuka, dan garam ke dalam air mendidih. Cuko sengaja dibuat panas dan manis untuk menambah nafsu makan makan . Namun, beberapa orang yang tidak menyukai rasa pedas dapat lebih memilih cuko yang kurang panas tapi manis.

Formerly, Pempek is made from a kind of river fish called Belida. However, because this fish is very rare and expensive now, people alternate the fish with with other river fish as Gabus, Toman, Bujuk, and even with sea fish as Tenggiri, Kakap Merah (Red Kakap), Parang-parang, Kacang-kacang, Ekor Kuning (Yellow Tail), and Ikan Sebelah. Although they are cheaper but the pempek made of these fish are still delicious enough.

Sebelumnya, Pempek terbuat dari sejenis ikan sungai yang disebut Belida. Namun, karena sekarang ikan ini sangat langka dan mahal, orang-orang menggantinya dengan ikan sungai lainnya seperti ikan Gabus , Toman, Bujuk, dan bahkan dengan ikan laut seperti ikan Tenggiri, Kakap Merah, Parang-parang, Kacang-Kacang, Ekor Kuning, dan Ikan Sebelah . Meskipun mereka lebih murah tetapi pempek yang terbuat dari ikan ini masih cukup lezat.
