Arnotts Cooking Club: Aisling Larkin.
For the latest instalment in our series, food broadcaster brings a flavour-packed Oven Roast Chicken & Cauliflower Shawarma, served with homemade flatbreads and fresh tzatziki.
A delicious take on an easy-to-love sharing feast - perfect for bringing to the table for a relaxed weekend dinner. Save this one for your next home-cooked meal.

Oven Roast Chicken & Cauliflower Shawarma. Serves 5

SHAWARMA BUTTER
50g butter, softened
1½ tsp cumin
1½ tsp smoked paprika
1 tsp turmeric
½ tsp allspice
¼ tsp chilli flakes
1 tsp cinnamon
Juice of ½ lemon
2 cloves garlic, crushed

OVEN ROAST CHICKEN
3 chicken fillets, roughly chopped
½ head cauliflower, roughly chopped
2 peppers, roughly chopped
6 small potatoes
Olive oil
Flaky sea salt

TZATZIKI
100g low-fat sour cream
100g low-fat Greek yoghurt
Big handful fresh mint
1 red onion, finely diced
4 baby cucumbers, grated & drained
100g rocket

FLATBREADS - MAKES 10
250g plain flour
½ tsp salt
250g 0% fat Greek yoghurt
1 tbsp olive oil
