Nothing like maa ke haath ki pinni, follow the recipe if you're away from home, to get a taste of home.
Ingredients:
1/2 cup whole wheat flour (atta)
1/2 cup ghee (clarified butter)
1/2 cup jaggery, grated
1/4 cup mixed Roopak's dry fruits (almonds, cashews, pistachios), chopped
2 tablespoons edible gum (gond), optional
1/4 teaspoon cardamom powder
A pinch of nutmeg powder (optional)
Instructions:
Roasting Flour:
Heat a non-stick pan over low-medium heat. Add whole wheat flour and dry roast until it turns golden brown. Stir continuously to prevent burning. This should take around 10-15 minutes.
Adding Ghee:
Once the flour is roasted, add ghee and continue stirring. Cook until the mixture releases a nutty aroma, and the ghee separates from the flour. This step takes about 10 minutes.
Adding ROOPAK'S DRY FRUITS:
Add chopped Roopak's dry fruits and edible gum (if using). Stir well and cook for another 3-5 minutes until the dry fruits are incorporated.
Incorporating Jaggery:
Add grated jaggery and mix until melted, creating a uniform consistency. Cook for an additional 3-5 minutes.
Adding Flavor:
Stir in cardamom powder and nutmeg powder (if using). Mix thoroughly.
Forming Mini Pinni:
Turn off the heat and let the mixture cool slightly. While warm, shape small portions into round balls or flat discs. Grease your hands with ghee to prevent sticking.
Allowing to Set:
Place the mini Pinnis on a plate and let them cool completely. They will firm up as they cool.
