Churma Laddu Recipe (No Sugar, Less Ghee)
A soft, healthy, jaggery-sweetened ladoo made with wheat flour and minimal ghee.
Ingredients:
Wheat flour – 1 cup
Semolina – 1/4 cup
Besan – 1/4 cup
Salt – a pinch
Cardamom powder – a pinch
Ghee
Water
Chopped nuts – 1/4 cup
Jaggery – 1/2 cup
Instructions:
In a mixing bowl, combine wheat flour, semolina, besan, salt, cardamom powder, and 2 tbsp ghee.
Add 1/2 cup water gradually and knead into a firm dough. Knead for 2 minutes.
Shape small elongated pieces using your fingers and rest them for 10 minutes.
Heat oil on medium flame and fry the dough pieces until golden brown.
Let them cool completely, then crumble with your hands.
Transfer to a grinder and grind into a coarse powder.
Heat 1 tbsp ghee in a pan, add chopped nuts, and roast for 2 minutes. Set aside.
In another pan, melt jaggery with 2 tbsp water and cook for 2 minutes until it becomes a smooth syrup.
Add 2–3 tbsp ghee to the jaggery syrup for better binding.
Pour the hot syrup into the ground flour mixture.
Add roasted nuts and mix well.
While warm, shape into ladoos.
