💙 Cooking the Indigo Pigment

After aeration, the indigo settles at the bottom.
We then cook this thick paste gently.

Cooking helps remove extra water, clean the pigment, and make the blue color strong and stable.
This step is important before shaping them into cakes.

Every shade of indigo starts with long hours of work in the fields. 🌿

From morning till evening, our Taraiblue ladies,
✂️ Cut each plant by hand
🌾 Tie them into heavy bundles
🚜 Load them onto tractors
💪 And finally, unload them into the tanks for fermentation

Nothing here is mechanical — it’s all done by hand, with patience, skill, and strength that has been part of this land for generations.

🌿💙 The Art of Harvesting Indigo Leaves 💙🌿

Did you know the way you harvest indigo leaves decides how rich your blue will be? Here’s how we do it:

🌱 Stage of Growth – Harvest just before flowering for the highest pigment. Waiting too long reduces color strength.

✂️ How to Harvest – Cut stems 5–6 inches above the ground (never uproot). This helps the plant regrow for more harvests.

☀️ Best Time of Day – Early morning or late afternoon. Midday sun makes leaves wilt and lose strength.

📦 Handling – Process leaves immediately for the best dye. If delayed, keep them shaded and moist under a damp cloth.

🔄 Multiple Harvests – With care, the same plants can give you 2–3 harvests in one season.

🌿 Indigo Fermentation & Kitchen Fermentation – Same Science, Different Magic

When we soak indigo leaves in a tank, the water starts to bubble and foam after a few hours. Many people wonder – why does this happen? The answer is fermentation.

Think about what happens in your kitchen:

When you leave dosa batter overnight, tiny bubbles appear the next morning.

When you keep bread dough to rise, it becomes soft and airy with gas pockets.

In both cases, natural microbes (bacteria and yeast) are feeding on sugars and releasing carbon dioxide gas. That gas gets trapped, and we see bubbles or froth.

The same thing happens in the indigo tank:

1. Leaves soak in water → natural bacteria break down a compound in the leaves (called indican).

2. This releases indoxyl, and along with it, gases like carbon dioxide.

3. The gases rise as bubbles, and the natural soap (saponin) in indigo leaves helps the bubbles stay longer, creating foam.

4. As soon as some indoxyl meets air, it starts turning into blue pigment (indigo) – which is why the bubbles sometimes look bluish or purple.

👉 Just like bubbles in dosa batter tell you it’s fermented and ready to cook,
👉 bubbles in the indigo tank tell you fermentation is active and the blue is on its way.

But there’s a balance:

No bubbles = weak fermentation.

Healthy blue/sweet-smelling bubbles = perfect stage.

Dark, smelly bubbles = over-fermentation, pigment may be lost.

So, whether it’s food in the kitchen or pigment in the tank, fermentation is nature’s way of creating something new and magical. ✨

When we fill our indigo tanks, the leaves need to stay fully under water for the process to begin. But leaves float… and bamboo also floats. So how do we keep them down?

We make a very simple setup.

🌿 Bamboo is light and hollow. It floats, but when we tie it into a frame, it spreads the weight across the tank.
🪨 Stones are kept on top of this frame. They press it down and keep all the leaves under water.

Bamboo and stones work together — one gives support, the other gives weight. And slowly, the leaves begin to change and release the beautiful blue hidden inside.

Even in this small step, nature shows us how everything has a role, and how simple teamwork makes big things possible. 💙
