Torna la rubrica: Storie sul banco di lavoro.
Lo strumento principale di chi lavora a mano: il coltello. Il "coltellino rosso", lama di precisione della Mozart, azienda tedesca attiva dal 1923 è un grande classico. Ho visto usare, anche in aziende più grandi, un gran quantitativo di lame diverse, più comuni e non, curve o dritte, dai semplici taglierini alle mezzelune, ma rimango fedele a questo coltello semplicissimo.
Un po' ne sono affezionato perché è stato il primo strumento su cui ho messo le mani quando prendevo lezioni dal mio maestro, a Firenze. La prima cosa che ho tagliato è stato uno sgorbissimo portachiavi: seguire la matrice per il taglio era (e a volte ancora oggi è) un'impresa, tenere la lama nel modo giusto, applicare la giusta forza, sapere come curvare usando le dita esterne "come un timone". Imparare a tagliare è stato il primo passo, ancora non perfetto, ancora migliorabile.
E questo coltello che ancora uso mi è stato regalato dal maestro, con nessuna cerimonia perché semplicemente comprarlo era diventato più difficile. Ecco, un altro strumento che è diventato anche qualcosa di più, un ricordo.

The main tool of those who work by hand: the knife. The "red knife", a precision blade made by Mozart, a German company active since 1923, is a great classic. I have seen, even in larger companies, a large quantity of different blades, more common and not, curved or straight, from simple cutters to crescents, but I remain faithful to this very simple knife.
I am a bit fond of it because it was the first instrument I got my hands on when I was taking lessons from my teacher in Florence. The first thing I cut was a very gouge keychain: following the cutting matrix was (and sometimes still is) a feat, holding the blade in the right way, applying the right force, knowing how to bend using the external fingers " like a rudder ". Learning to cut was the first step.
his knife that I still use was given to me by the master, with no ceremony because simply buying it became more difficult. Here, another tool that has also become something more, a memory.
