First, in a separate container, prepare the marinade by mixing olive oil, apple cider vinegar and balsamic vinegar.
Cut clean and dried vegetables: eggplant - longitudinal slices 1 cm thick, champignons - in half, peppers - wide boats.
Place the vegetables in a large bowl and pour over the marinade, salt, pepper and spices. Mix everything thoroughly and leave for a while.
Put the vegetables on the grill and roast on the coals for 10 minutes.
