Prepare apple compote: in a heavy-bottomed saucepan, combine apples, brown sugar, vanilla extract, ground cinnamon, salt and 1/4 tbsp. water. Cook, stirring occasionally, at medium heat, until the apples are tender, about 30 minutes. Prepare homemade yogurt: heat milk (Milk should simmer, but not boil.) In a large saucepan over low heat, up to 85 C. Remove from heat and slowly add milk powder and maple syrup with a whisk. Cool the milk mixture to 40 C. for 20 - 30 minutes. Mix with plain yogurt.
