Heat the chocolate and butter in a heat-resistant bowl over a saucepan of boiling water (the bottom of the bowl must not touch the water), stirring occasionally, until the chocolate and butter are melted and smooth, about 5 minutes. Whisk the egg yolks and 1/4 cup sugar in a medium bowl until fluffy. In a separate bowl, beat the egg white and 3 tablespoons of sugar until peaks form, about 3 minutes.
