Pre-heat the oven to 180 degrees. Wash all the vegetables well and send them to the oven. Carrots and potatoes take 40 minutes to be done, and beets 80 minutes (depending on size).
When the vegetables are cold, cut them into medium cubes. Chop more pickles and transfer the ingredients to a salad bowl. Add peas and chopped greens there.
For the vinaigrette sauce, mix the oil with vinegar and a pinch of salt in a separate container. Stir the dressing with a whisk and pour over the salad. Adjust the taste with salt and pepper.
