Some days I have to dig pretty deep to find the good.
There is something good if you look hard enough.
I know a lot of us have experienced pain & heartbreak.
If you feel sad about losing a loved one do something in their honor.
Celebrate their life by making a donation in their name or making an ornament with their picture on it.
They wouldn’t want us being sad because they are not here. They would want us enjoying ourselves and make the most of everyday, holidays and otherwise.
I love the holidays!❤️🎄
It’s a time to be happy & find joy in the little things.

We have to invest in ourselves.

What we feed our mind becomes our reality.

Day 22 of my 30 day challenge.

Moving your body can be a walk around the block
Some days you are going to push harder & sweat a little more.
Others it’s a walk & talk with a buddy.
Today mine was 45 minute upper body + walk with Presley Fitzhugh
Bonus ab workout. She makes me laugh. 😂

Start with a 20 minute “I’m going to be late” walk.
You won’t regret it.
Clears your mind.
Enhances your mood
You need YOU time.
Make time, you totally deserve it.

Celebrate by cooking up these incredibly delicious Carnitas & Salsa Roja.

Details below

Carnitas Ingredients:⁠
• 2 Tbsp. olive oil⁠
• 3 cloves garlic, finely chopped⁠
• 1 tsp. dried oregano⁠
• 1 tsp. ground cumin⁠
• 1 tsp. coriander⁠
• 1 lb. 14 oz. pork loin⁠
• 1 tsp. sea salt (or Himalayan salt)⁠
• 1 tsp. ground black pepper⁠
• 1 cup chopped onion (approx. 1 1⁄3 medium)⁠
• 1 medium jalapeño pepper, seeds removed, finely chopped⁠
• 1 medium orange, cut in half⁠

Carnitas Directions:
1. In a small bowl mix oil together with garlic, oregano, cumin, and coriander.⁠
2. Sprinkle salt and pepper over all sides of pork loin then rub oil mixture evenly over entire pork loin with clean or gloved hands.⁠
3. Add pork loin, onion, and jalapeño pepper to a slow cooker; squeeze the juice from the orange halves over pork and add halves to slow cooker.⁠
4. Cook on low for 4 to 5 hours, or until pork reaches an internal temperature of 145° F.⁠
5. Shred pork with two forks and serve immediately, or store refrigerated in an airtight container for up to 4 days.

Salsa Roja Ingredients:⁠
• 5 pasilla chiles (or dried chiles of choice)⁠
• 1 Roma tomato⁠
• ¼ medium onion⁠
• 3 cloves garlic⁠
• ¾ tsp. sea salt (or Himalayan salt)⁠

Salsa Roja Instructions:⁠
1. Place all cooked ingredients in a medium saucepan, cover with water, and bring to a gentle boil for 10 minutes, or until chiles are soft and pliable.⁠
2. Place chiles, tomato, onion, garlic, and salt in a blender with ¼ of the cooking water. Cover and blend, adding more water, if needed, until salsa has a smooth, saucy consistency.⁠
3. Serve immediately or store in airtight container for up to 5 days
