In the beginning there was a LLR/DDS collaboration with the Lucy dress and the Romper, we have since added the Ballerina dress. The dresses have full circle twirl skirts that help our daughters feel beautiful and carefree! The Lucy dress has a sleeve or tank option.My girls simply love these dresses! The birthday shark, Eli, (we are starting early for November 8th) wants some fish as all sharks do!

Fish Sticks with Homemade Dipping Sauce

1 leanest - 3 Green - 2 Healthy fat - 2 Condiment (per serving)

4 servings
Ingredients:
• 2 lb. cod fillets, sliced into 2-oz. sticks
• 2 tbsp parmesan cheese
• 6 tbsp almond flour
• ¼ tsp salt
• ¼ tsp ground black pepper
• 6 cups green beans, washed and trimmed
• 2 tbsp lemon juice
• 2 tbsp Dijon mustard
• 4 tsp extra virgin olive oil
• 6 tbsp light mayonnaise
• ½ cup fresh basil, chopped
• 1 clove garlic, finely minced

Directions:

1. Pre-heat oven to 425⁰F.

2. Line sheet pan with parchment or foil. Spray with non-stick cooking spray.

3. Combine parmesan, almond flour, salt, and pepper.

4. Coat both sides of fish with flour mixture.

5. Place on prepared sheet pan and bake about 5 to 6 minutes until cooked.

6. While fish sticks bake, steam green beans. Bring an inch of water to a boil in a large saucepan fitted with a steamer basket. Add green beans, cover, and cook until tender-crisp, about 3 to 4 minutes.

7. Pick a sauce and make it: 1. For the lemon mustard sauce, combine the lemon juice, mustard, and extra virgin olive oil, mix well OR 2. For the basil aioli, combine the mayonnaise, basil, and garlic; mix well.

8. Per serving: 4 fish sticks, 1½ cups steamed green beans, and 1 tablespoon of either the lemon mustard or basil aioli sauce.

We are getting ready for fall at Mom's house! Linda Cole is hosting a birthday lunch tomorrow and we did cooking, shopping, game prep & decorating today! It's getting me in the mood for fall cooking! We will be trying this recipe this week!

Slow Cooker Texas Beef Chili

1 lean - 3 Green - 0 Healthy fat - 3 Condiment (per serving)

6 servings
Ingredients:
• 1 tsp oil
• 2 lbs. beef bottom round roast, cut into 1-inch cubes
• 1 tbsp chili powder
• 1 tbsp cumin
• 2 tsp garlic powder
• ½ tsp smoked paprika
• 1 cup beef stock
• 2, (15-oz.) cans diced tomatoes with green chilies
• 6 tbsp reduced-fat shredded cheddar cheese
• 6 tsp plain Greek yogurt
• ½ cup chopped red bell pepper
• ½ cup chopped yellow bell pepper
• ½ cup chopped scallions
• 4 cups cooked, riced cauliflower

Directions:

1. Heat oil in a large skillet over medium-high heat. Brown the beef in batches until well browned, about 4 to 5 minutes. Transfer to a 5-to-6-quart slow cooker.

2. Using the same skillet, reduce the heat to medium and stir in the chili powder, cumin, and garlic powder. Toast the spices until fragrant, about 15 to 30 seconds.

3. Add the beef broth and simmer, scraping up the browned bits on the bottom of the skillet, about 3 minutes.

4. Transfer to the slow cooker. Add the canned diced tomatoes with green chilies, cover and cook on high for 5 hours or low for 8 hours.

5. Serve each bowl of chili (⅔ cups per serving) with 1 tablespoon shredded cheese, 1 teaspoon Greek yogurt, 4 teaspoons red bell pepper, 4 teaspoons yellow bell pepper, 4 teaspoons scallions, and ⅔ cup cooked, riced cauliflower.

Cauliflower Crust Chicken Potpie

1 lean - 3 Green - 0 Healthy fat - 2 Condiment (per serving)

4 servings
Ingredients:
• 4 cups riced cauliflower
• ½ cup water
• ¼ cup grated parmesan cheese
• 1 egg
• ¼ tsp or less of each: salt & pepper, divided
• 1¼ lb. boneless, skinless chicken thighs cut into bite-sized cubes
• ½ cup diced celery
• ½ cup diced kabocha squash
• ½ cup quartered button mushrooms
• ½ cup cut green beans
• 1-2 sprigs of fresh thyme
• 1 cup chicken broth
• 1 cup unsweetened almond milk

Directions:

1. Preheat oven to 400⁰F.

2. Combine cauliflower and water in microwave-safe bowl. Microwave for 5 minutes or until cauliflower is tender. Drain and allow cauliflower to cool. Place cauliflower in a cheesecloth to squeeze out as much liquid as possible.

3. Mix ¾ of the riced cauliflower (¾ cup for 4 servings) with the parmesan cheese and egg. Reserve the remaining riced cauliflower for later.

4. On a baking sheet lined with parchment paper, spread cauliflower mixture into equally-sized circles that will fit the inside circumference of your serving bowls. Bake cauliflower crusts until center is dry and crust is golden brown.

5. Add the remaining ingredients to an Instant Pot, including the reserved riced cauliflower, to make the potpie filling. Secure lid, push meat/stew mode, and adjust time for 10 minutes. When Instant Pot beeps, naturally release pressure.

6. Ladle chicken potpie filling into bowls and top each with a cauliflower crust.

7. Slow Cooker Method: Make the cauliflower crust as direct. Add all of the remaining ingredients for the potpie filling to a slow cooker. Cover with lid, and cook on low for 2 hours.
