An easy and delicious recipe for breakfast

Egg Muffins.

6 hard-boiled eggs, grated
4 ounces cream cheese
1/4 cup Cheddar cheese, shredded
1/4 cup bacon bits or chopped shaved ham
English muffins

Mix together the eggs, cream cheese, Cheddar and bacon or ham. Refrigerate. Warm in a microwave and serve on toasted English muffins.

Sausage and Cheese Mini-Muffins

1 pound pork sausage (hot or mild)
1 (10-ounce) can Campbell's Cheddar Cheese soup
1/2 soup can of water
3 cups Bisquick

Preheat oven to 400 degrees. Brown sausage and drain well. Mix soup and water and add to drained sausage. Stir in Bisquick. The mixture will be lumpy. Spray mini-muffin tins with cooking spray. Fill cups 3/4 full or even to the top. Bake for 20 minutes or until tops are brown.

A great recipe to whip up Christmas Eve and pop in the oven Christmas morning!

Creme Brulee French Toast

loaf French or Italian bread
1 stick of butter
1 cup packed brown sugar
a little over 2 tablespoons white corn syrup (Karo)
5 large eggs
1 1/2 cups half-and-half
2 teaspoons Grand Marnier liquor
1 teaspoon vanilla
dash of salt

Combine butter, brown sugar and corn syrup. Cook mixture until bubbly and pour into 9 x 13-inch pan. Place bakery bread (sliced French or Italian bread) over the above mixture, approximately 8-9 slices. Whisk eggs, half-and-half, Grand Marnier liquor, vanilla and salt. Pour mixture over bread and chill overnight. Bake in a preheated oven at 350 degrees for 40 minutes. Serve upside down so the sauce is on top or simply spoon out. Can sprinkle with powdered sugar.

Wonderful for Christmas morning...

Pecan Pie Muffins.

1 cup chopped pecans
1/2 cup all-purpose flour
1 cup firmly packed brown sugar
2 large eggs
1/2 cup butter, melted

Combine pecans, sugar and flour; set aside. Beat eggs until foamy. Stir eggs and butter together and add to dry ingredients, stirring just until moistened. Pour into greased foil baking cups 2/3's full. Bake at 350 degrees for 20-25 minutes. Yields 9 muffins.

An extra easy appetizer...

Polenta with Gorgonzola.

Slice one 18-ounce tube polenta 1/2 inch thick; cut each round in half. Bake at 400 degrees until warmed through, about 7 minutes. Top with crumbled gorgonzola and chopped walnuts; bake until lightly browned, 3 minutes. Top with chives.
