Crunchy Zucchini Fries with Creamy BBQ Dipping Sauce
Ingredients:
For the Zucchini Fries:
2 medium zucchinis, cut into fries or sticks
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
Cooking spray or olive oil for baking
For the Creamy BBQ Sauce:
1/2 cup mayonnaise
1/4 cup BBQ sauce
1 tablespoon honey
1 tablespoon lemon juice
1/2 teaspoon garlic powder
Salt and pepper to taste
Directions:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
Prepare a dredging station with three shallow bowls. In the first bowl, mix the flour, salt, black pepper, and paprika. In the second bowl, beat the eggs until smooth. In the third bowl, combine the panko breadcrumbs and grated Parmesan cheese.
Dip each zucchini stick first in the flour mixture, shaking off any excess, then into the beaten eggs, and finally coat well with the breadcrumb mixture. Place the coated zucchini sticks in a single layer on the prepared baking sheet.
Lightly spray the zucchini fries with cooking spray or drizzle with a small amount of olive oil to help them crisp up.
Bake in the preheated oven for 20-25 minutes, turning halfway through, until the zucchini fries are golden brown and crispy.
While the fries are baking, prepare the creamy BBQ sauce. In a small bowl, mix together the mayonnaise, BBQ sauce, honey, lemon juice, garlic powder, salt, and pepper until smooth and creamy.
Serve the hot, crispy zucchini fries immediately with the creamy BBQ sauce on the side for dipping.
