Who likes lemon drop candy? I have fond memories of my Granddaddy sharing his jar of lemon drops as a child! This recipe has the wonderful taste of that delicious treat!
LEMON AND BLUEBERRY TRIFLE
Ingredients
1 package Sunny Lemon™ Pound Cake & Icing Mix
1 cup water
½ cup butter, melted
2 cups heavy whipping cream, divided
1 packet Lemon Drop™ Cheese Ball Mix
1 cup fresh blueberries
Lemon zest, fresh mint leaves, optional
Directions
Prepare Sunny Lemon Pound Cake Mix packet 1 according to package directions using water and butter. Cool completely. Cube into bite-size pieces.
In a small bowl, combine ½ cup whipping cream and Sunny Lemon Pound Cake Mix packet 2. Using an electric hand mixer, beat on high until firm peaks form. Set aside.
In a medium bowl, combine remaining 1½ cups whipping cream and Lemon Drop Cheese Ball Mix. Using electric mixer, beat on high until stiff peaks form.
Divide half the cake cubes among 8 large wine glasses. Top with half the lemon mousse and half the blueberries. Repeat layers with remaining cake, mousse and blueberries. Dollop with reserved whipped cream. Garnish with lemon zest and mint leaves, if desired.
