Healthy fish korma

Method
STEP 1
Boil the rice for 25 mins until tender. Meanwhile, heat the oil in a wide, non-stick pan over a medium heat and fry the onions and ginger for 8-10 mins, covered, until softened. Add the courgette, spices and stock, then cover and simmer for 10 mins until the courgette is tender. Remove from the heat.

STEP 2
Blitz the mixture directly in the pan using a hand blender until smooth, then return to a low heat heat and stir in the ground almonds and yogurt.

STEP 3
Submerge the cod in the sauce and cook, covered, for 8-10 mins until the fish flakes easily. Meanwhile, combine half each of the onions, lemon juice, coriander, chilli and banana slices for the salad. Serve half the rice with half the korma and the salad. Leave the remainder to cool completely, then chill to eat another day with the rest of the salad. Will keep chilled in an airtight container for two days. Reheat in a pan over a low heat or microwave until piping hot.

Chinese-style braised beef one-pot

Method
STEP 1
Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.

STEP 2
Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.

STEP 3
Pour in the soy and stock (it won’t cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 4 hrs, stirring the meat halfway through. Allow 6 hrs for the meat to cook if using a slow cooker. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.

STEP 4
Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.

Method
STEP 1
Tip the pancetta into a large flameproof casserole dish over a low heat and cook, stirring often until all the fat has released and the pancetta is crisp and golden, about 8-10 mins. Remove to a bowl using a slotted spoon. Pour the olive oil into the dish and turn the heat up to medium. Once the oil is shimmering, cook the onion, carrot and celery for 15 mins until beginning to soften, then stir in the garlic and cook for another 2 mins.

STEP 2
Turn up the heat to medium-high, tip in the mince and cook for 3-4 mins until browned. Return the pancetta to the pan, then add the tomato purée and herbs, and cook for 2 mins more until darkened slightly.

STEP 3
Pour in the cherry tomatoes and beef stock, and stir to combine. Bring to the boil, season well, then add the bay leaf and reduce the heat to a simmer. Cook for 15-20 mins, then add the lasagne sheets and simmer for another 5 mins, stirring to break up the sheets.

STEP 4
Meanwhile, mix most of the parmesan with all of the mascarpone and plenty of seasoning, and heat the grill to high. Once the pasta is al dente and the soup is bubbling and has thickened, dot the mascarpone mixture over the soup and sprinkle over the remaining parmesan. Slide under the hot grill for 3-5 mins until the topping is golden and bubbling. Divide between four bowls and serve scattered with basil, if you like.

Method
STEP 1
First, make the pastry. Tip the ingredients into a food processor with 1 /4 tsp salt. Blend until the mixture resembles breadcrumbs. Drizzle 2-3 tsp cold water into the funnel while the blade is running – the mixture should start to clump together. Tip onto a work surface and bring together, kneading briefly into a ball. Pat into a disc, wrap in cling film, and chill for at least 20 mins. Heat oven to 200C/180C fan/gas 6.

STEP 2
Remove the pastry from the fridge and leave at room temperature for 5 mins to soften. Flour the work surface, then unwrap the pastry and roll to a circle the thickness of a £1 coin. Use the pastry to line a deep, 23cm round fluted tin – mine was about 3cm deep. Press the pastry into the corners and up the sides, making sure there are no gaps. Leave 1cm pastry overhanging (save some of the pastry scraps for later). Line with baking parchment (scrunch it up first to make it more pliable) and fill with baking beans. Blind-bake for 15-20 mins until the sides are set, then remove the parchment and beans and return to the oven for 5 mins until golden brown. Trim the pastry so it’s flush with the top of the tin – a small serrated knife is best for this. If there are any cracks, patch them up with the pastry scraps.

STEP 3
Meanwhile, weigh the butter, syrup and sugars into a pan, and add 1 /4 tsp salt. Heat until the butter has melted and the sugar dissolved, stirring until smooth. Remove from the heat and cool for 10 mins. Reduce oven to 160C/140C fan/gas 3.

STEP 4
Beat the eggs in a bowl. Add the syrup mixture, vanilla and pecans, and mix until well combined. Pour half the mixture into the tart case, scatter over half the chocolate chips, then cover with the remaining filling and chocolate chips. Bake on the middle shelf for 50-55 mins until set. Remove from the oven and leave to cool, then chill for at least 2 hrs before serving.

Jerk sweet potato & black bean curry

Method
STEP 1
Gently soften the diced onion in the sunflower oil in a big pan or casserole.

STEP 2
Meanwhile, whizz together the roughly chopped onion, ginger, coriander stalks and jerk seasoning with a hand-held blender. Add to the softened onion and fry until fragrant. Stir in the thyme, chopped tomatoes, vinegar, sugar and stock cubes with 600ml water and bring to a simmer. Simmer for 10 mins, then drop in the sweet potatoes and simmer for 10 mins more. Stir in the beans, peppers and some seasoning, and simmer for another 5 mins until the potatoes are almost tender. Cool and chill for up to 2 days.

STEP 3
To serve, gently heat through on the hob. Roughly chop most of the coriander leaves and stir in, then serve scattered with the remaining leaves.

Spicy vegetable egg fried rice

Method
STEP 1
If making the rice from scratch, cook it following pack instructions, then drain. Mix the chillies and garlic (in a pestle and mortar, if you have one) with a pinch of salt, to make a paste.

STEP 2
Heat oil in a wok or large frying pan on a medium-high heat. Add the carrots and stir-fry for 5 mins until tender. Add the cabbage and chilli paste and cook for 1 min more. Tip in the cooked basmati or leftover rice and stir-fry for 1 min until piping hot.

STEP 3
Push the rice mixture to one side of the pan. Add the eggs to the cleared space and scramble until set. Mix in the onions, peas and soy and stir-fry everything together until the peas are hot.

STEP 1
Heat the oil in a saucepan, fry the nigella and fennel seeds for about 10 seconds. Add the onion and cook gently for 8-10 minutes until golden.

STEP 2
Mix in the tomatoes, chillies, sugar, paprika, turmeric and chickpeas. Bring to the boil, then simmer for 10 minutes. Stir in the tamarind and coriander. Add the spinach leaves and stir gently until they’ve just wilted. Serve with yogurt and chapatis.

Cheesy black bean quesadillas

Method
STEP 1

Hold the sieve in the sink and tip in the beans. Let the liquid from the can drain away, rinse the beans under cold running water and drain well. Tip the beans into the mixing bowl.

STEP 2

Mash the beans with the potato masher to make a lumpy texture.

STEP 3

Place the box grater on your chopping board and carefully grate the cheese. Add the cheese to the mashed beans.

STEP 4

Peel the papery outer skins off the spring onions so you’re left with just the shiny parts. Use the scissors to cut off the roots and about 2cm from the other end. Snip the spring onions into small pieces, about the size of a pea. Add the spring onions to the mixing bowl.

STEP 5

Use the scissors again to cut the coriander into small pieces. Don’t forget to use the stalks, too, as they contain lots of flavour. Add the coriander to the mixing bowl.

STEP 6

Use a teaspoon measure to measure ¼ tsp ground cumin and ½ tsp paprika, and add these to the bowl. Season the ingredients with salt and pepper and mix everything together.

STEP 7

Place a wrap on your board. Scoop half the bean mixture from the bowl onto one half of the wrap. Spread it out in an even layer, making sure you only cover one side. Close the wrap like a book, to cover the filling inside and make a semi-circle. Do the same with the other wrap and the rest of the filling.

STEP 8

Put a medium-sized frying pan on the hob. Lift one of the wraps into the pan, then turn the heat to low-medium. After 2 mins, use a fish slice to lift the wrap and check underneath. If it’s golden brown, it’s time to turn it over, if not, keep cooking, checking every minute or so until it’s ready. Use the fish slice to carefully flip the wrap over, then cook for another 2-4 mins on the other side until toasty brown. Turn off the heat and slide the quesadilla onto your chopping board. Use a pizza cutter or knife to cut it into wedges, then tuck in.

STEP 1
Put the noodles in a large heatproof bowl, pour boiling water over them and leave for 4 minutes, then drain and refresh under cold running water.

STEP 2
Put the lime juice, cayenne, sugar and fish sauce in a bowl and mix well. Have all the other ingredients ready by the cooker.

STEP 3
Heat the oil and fry the prawns until warmed through. Add the spring onions and noodles and toss around. Tip in the lime juice mixture, then stir in the beansprouts and half the peanuts and coriander. Cook for 1 minute until everything is heated through.

STEP 4
Pile into a large dish, scatter with the rest of the peanuts and coriander, and serve with lime wedges and sweet chilli sauce.
