Baked Granola fruit tarts with vanilla lemon curd, fresh seasonal fruit 🍋🍇🍒🍑 and Greek yogurt ❤️ recipe 💕
For the crust ( ) : in the mixing bowl combine>>
1 1/2 cups roll oats , 1/4 cup cook quinoa , 1 cups of mix nuts ( I used pecan almond and pistachio) , 1 Tbs ground flaxseed , 1 Tbs sesame seed , 6 Tbs melted coconut oil , 1/2 tsp cinnamon , 1/4 cup honey , zest of one orange 🍊, 3 Tbs almond butter , 1 tsp vanilla extract __________________🍩
recipe notes - bake at 325F for 20 mins
- substituted peanut butter for almond butter
- using spoon to press and form the oat tart right away after take them off the oven
- carefully remove granola tart from the mold when they are completely cooled
- the tart crust can be keep for 5 days in the cold dry place , store in the airtight container.

Delicious vanilla lemon curd
🍋 : juice of three lemons, 4 egg yolks , 6 Tbs butter at room temperature, 1/4 cup honey , 1 tsp vanilla extract with beans , zest of 2 lemons , pinch of salt _______________🍋
Recipe note:
- whip butter honey and vanilla with mixer or egg be**er until light and fluffy, add one egg yolk at a time then salt , slowing pure in the lemon juice,
- cook the custard with double boiler method and gently stir the custard until thicken , add lemon zest the last thing to keep the aroma and prevent bitterness.
- store lemon custard in the fridge with cover 1 hours up 😋
Lemon curd so good to top of yoghurt or coconut chia pudding
