The Atlas Edit
Summer is around the corner!
Welcome to the warm-days edit of all the things we're buying, eating and thinking about.
We were lucky to be asked to participate in two amazing fundraisers this spring.
In late March we hosted a Hampton's themed party with Booze & Boutiques that helped raise almost $10,000 for The Children's Dream Fund. We had the Oyster Bar shucking fresh oysters, our bartender John shaking up martinis and some amazing raffle items. It was an epic night.
Then, on a gorgeous Friday night in April at the Mahaffey Theater, along with a few amazing local boutiques, we had 11 handsome models strutting their stuff in Atlas fits to benefit Heels to Heal. The event raised over $166,000 that night! We were so honored to be a part of something so special.

The Summer Of Love:
There is a lot of animus and stress and anger out there
in the world at the moment.
We have always believed that Love Always Wins.
And we, and all of you, see a reminder of that when you walk in our doors thanks to a big Love painting by shop pal and local artist Tommy Bayot.
It serves as a constant reminder to turn to love over hate.

What We're Eating:
St Pete has had the best weather we've seen in years and we're living for it. That's why we're all here, right?
Spending as much time outside and on the grill is what we've been doing lately and we've been experimenting with making the perfect grilled Caesar salad. This one comes together pretty easy and using store bought dressing (Ina approved - IYKYK) and customizing it makes it a no brainer. Adding pickled onions to it adds a summery zing to a classic.
Grilled Caesar Salad
Ingredients:
2 romaine hearts, halved lengthwise
2 ounces Parmesan cheese, shaved
Pickled Onions
Bread Crumbs
"Homemade" Caesar dressing
Pickled Onions:
1 small red onions
1 cups white vinegar
1 cups water
1/4 cup cane sugar
1 tablespoons sea salt
1-2 garlic cloves
1 teaspoon mixed peppercorns
Thinly slice the onions and place in a medium jar along with the garlic and peppercorns.
Heat the vinegar, water, sugar, and salt in a saucepan over medium until the sugar and salt dissolve, about 1 minute. Let cool and pour over the onions. Set aside to cool to room temperature, then store the onions in the fridge.
Your pickled onions will be ready to eat once they're bright pink and tender - about 1 hour. They will keep in the fridge for up to 2 weeks.
Prep the dressing:
Buy the best store bought version you can and stir in extra anchovy paste, some lemon juice, a bit of breadcrumbs and lot's of fresh ground black pepper.
Preheat the grill on medium-low. Brush the cut sides of romaine hearts with olive oil and place them face down on the hot grill. Cook without disturbing until grill marks appear, 2-4 minutes. Using tongs, flip the romaine and cook until grill marks appear, 2 minutes more.
Transfer the grilled romaine to a serving platter. Top with ½ cup pickled onions, dressing, and breadcrumbs. Sprinkle with Parmesan and serve.
