Would you try it?
We found this recipe for an easy, homemade haggis-like dish. While other recipes call for steaming the "haggis" in a crockpot, this one uses an oven. The spices look right. The meats are easy-to-get grocery items as opposed to 'pluck' you'd have to get from a butcher.

½ tablespoon butter (or a bit more as needed)
1 onion
½ teaspoon ground black pepper or more to taste
¾ teaspoon ground coriander
¾ teaspoon nutmeg
1 teaspoon allspice
½ teaspoon dried thyme or fresh (chopped)
¼ teaspoon cinnamon
1 lb ground lamb
½ lb chicken livers
1 cup stock (beef or chicken)
4 oz steel cut oats

Instructions:

* Preheat oven to 350F.

* Warm the butter in a pan. Finely dice onion and sauté in the butter over medium heat until soft, about 5 minutes.

* Meanwhile remove any fatty or tough pieces from chicken livers. Roughly chop the rest.

* Mix spices and thyme into the onion, simmer a minute

* Add lamb and chicken livers.

* Brown the meat then add the stock and cover. Allow to simmer for about 20 minutes.

* Add the oatmeal, mix well and transfer to an oven dish (unless you started with a dish that can transfer).

* Cover and place in oven for 30 minutes.

* Remove the lid and cook another 10 minutes.

* Serve with mashed potatoes and mashed rutabaga/swede.

On this day in 1815, the critical Battle of Quatre Bras was fought. The Cameron Highlanders (79th Foot) fought alongside the Black Watch (42nd Foot) and 44th Foot in Major General Sir Denis Pack’s 9th Brigade, sent forward to hold a vital crossroads against Marshal Ney’s advancing French forces. The position was crucial to maintaining contact between Wellington’s army and the Prussians.

When these Highland regiments entered the fight, the situation was already unstable. Allied troops had been driven back and French infantry were advancing through tall rye fields that obscured visibility and disrupted cohesion. Both the 79th and 42nd deployed in line, engaging French with controlled volleys. However the battle soon devolved into brutal close combat.

When French cavalry charged, Pack’s brigade was caught still in line rather than formed into defensive squares. The Black Watch, demonstrating remarkable discipline, managed to form square in time successfully repelling repeated cavalry attacks.

Less lucky, the 79th Camerons were caught in the open, attempting to form square as the cavalry closed. While parts of the regiment succeeded in establishing a defensive formation, others were overrun in the confusion. During this crisis the 79th's regimental colors were nearly captured, leading to one of the most famous incidents of the day. Ensign David MacBean, carrying the color, was shot and severely wounded yet refused to relinquish it. MacBean held on despite repeated attempts by the French to seize the flag until he collapsed.

Meanwhile, the square of the 42nd continued to anchor the brigade. Its survival helped prevent a complete rout. Though badly shaken and suffering significant casualties, the brigade re-formed as reinforcements arrived. By evening, Ney had failed to take the crossroads.

For both the 79th and 42nd Quatre Bras was a tempering fire. By the time they reached Waterloo, both regiments were bloodied but resolute, an example to their fellow soldiers. And it is just possible that their sacrifices made victory at Waterloo possible.
