Chipotle Lime Chicken Bowl with Avocado Crema 🔥
Ingredients:
For the Chicken:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon chipotle powder
1 tablespoon lime juice
For the Bowl:
1 avocado, sliced
1 tomato, diced
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
For the Avocado Crema:
1 avocado, pitted and peeled
1/4 cup plain Greek yogurt
2 tablespoons lime juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Marinate the Chicken: In a bowl, combine chicken, olive oil, garlic powder, onion powder, salt, pepper, chipotle powder, and lime juice. Marinate for at least 30 minutes, or up to 2 hours.
Grill the Chicken: Preheat grill to medium-high heat. Grill the chicken for 2-3 minutes per side, or until cooked through.
Make the Avocado Crema: In a blender or food processor, combine avocado, Greek yogurt, lime juice, garlic, salt, and pepper. Blend until smooth and creamy.
Assemble the Bowls: Divide avocado, tomato, and onion among bowls. Top with grilled chicken and drizzle generously with the Avocado Crema.
Tips:
You can use any type of chicken you like for this recipe.
For a spicier marinade, add more chipotle powder or a pinch of red pepper flakes.
Serve the bowls with your favorite side dishes, such as rice, quinoa, or a green salad.
