Tuesday's Smunchie Breakfast

Banana pancakes

Greek egg scramble with spinach, red onion, maple breakfast sausage, feta cheese, shredded cheese, salt, and pepper.

Banana oatmeal pancakes for the win!

- 1 Ripe banana, mashed
- 1 Large egg
- 1/2 Cup of old fashioned oats
- 2 Tbsp of whole wheat flour (or whatever flour you prefer)
- 1 tsp of baking soda
- 2 tsp sugar
- Splash of vanilla extract
- Dash of salt

Combine thoroughly. For Smunchie, I used a 2 Tbsp measuring spoon to scoop out and make toddler sized pancakes. You can make your pancakes whatever size you want.

To cook the pancakes, I preheated my electric griddle to 250°F and sprayed the top with cooking spray. After scooping batter onto the griddle, I cooked the first side until air bubbles formed around the edges. Flip and cook another 3-4 minutes or until your desired doneness.

This recipe made 8 mini pancakes. Smunchie ate four banana oatmeal pancakes and we still have two more for a quick, easy breakfast tomorrow morning!

What did your toddler have for lunch today? Here is what we had!

- Bologna and American cheese sandwich with a thin schmeer of mayonnaise on split top wheat bread

- Red grapes, quartered

- Plain rice cake with homemade spiced carrot jam

For the bologna and cheese sandwich, I alternated slices of meat and cheese. Then I squished it flat, cut off the crust, and then cut the remaining sandwich into four sticks. I knew he was going to pull the sandwich apart and eat it that way, which is why I cut chose to cut it into strips. Even if he shoved an entire strip in his mouth at once, I knew it wouldn't be too much for him to chew.

I opted to quarter the grapes for safety reasons. Smunchie is still new with eating grapes and he likes to shovel small pieces of food into his mouth by the fistful. Quartered grapes help prevent choking on round food.

As for the rice cake, I had initially planned to spread the jam on top after breaking into smaller pieces. Then I remembered how my 13 month old son eats. So I broke the rice cake into bite sized bits and tossed it in the spiced carrot jam.

Here are a few Smunchie meals from the past couple of weeks!

1. Scrambled eggs with ham, green bell peppers, tomatoes, and cheese with a side of pineapple.

2. Chicken nuggets, seasoned rice with peas and corn, pineapple, and cheesy garlic toast.

3. Oatmeal with homemade blueberry lime jam, vanilla yogurt, and a sprinkle of chia seeds.

4. Chocolate cake with chocolate frosting for a very Smunchie birthday! The entire top tier was his smash cake and he ate just about every single bite!

This morning, Smunchie had quite the breakfast!

- Scrambled eggs with tomato, spinach, and cheese. I added a splash of heavy cream as well as salt and pepper for a touch of seasoning.

- Split top wheat toast with a bit of butter and homemade blueberry lime jam with chia seeds. The chia seeds were added to a small portion of the finished jam while it was still hot.

Guys, there was SO MUCH FOOD on this kid's plate and he ate just about all of it!
