How many are tempted to cut the hot sourdough from the oven? Don’t do it.

Here’s why:
The crumb is still cooking. Even after the loaf leaves the oven, the interior temperature remains high and moisture continues to redistribute throughout the bread.

Cutting too soon makes the crumb gummy. When you slice hot sourdough, steam escapes rapidly, leaving the inside dense, wet, or sticky instead of light and airy.

Flavor develops as it cools. The cooling period allows the starches to set and the flavors to mature.

You’ll get cleaner slices. A fully cooled loaf holds its structure better and won’t compress under the knife.

Please…. Don’t do it.
