What do you do when you get the freshest eggs from the Nduli Farm? You make quiche. So easy, so delicious and the kids can help.
I let Ruby crack and whisk the eggs and roll the pastry. Just make sure you wash hands after cracking the eggs.
She loves it and I love having a side kick.
The recipe is super easy, nothing fancy. Store bought short crust or puff pastry that been defrosted, rolled and put in a quiche dish. I pierce it with a fork on the base and add some bread crumbs to keep the base from going soggy (if you are fancy you could use baking beans and prepare the crust, but this mama doesn't have time for that). Once done I pop the base into the freezer while I make the filling.
Set your oven on 180.
For the filling I fry an onion and then add garlic and Jubilee Free Range bacon (have you tasted it? You should, you wont buy anything else), Once fried up nicely I add 2 grated baby marrows and a bag of baby spinach (normal spinach (chard) is a mission you have to take it off the stalks) and switch the stove off, you only want to wilt the spinach and not cook it to nothing.
Take the base out the freezer, add the filling that you have cooked up and pour over a mixture of 1 cup milk and 2 amazing eggs with salt, pepper and 1 heaped tsp corn flour. Add some feta and some cheddar cheese.
Pop it into the oven until the pastry is brown and egg mixture has set.

You could add mushrooms, peppers, chicken, remove the bacon. There are so many combo ideas.
